Vegan. Serving is about 1 1/3 to 1 1/2 cups. I use low sodium veggie broth so the sodium content is way lower than the nutrition facts display.

Recipe Ingredients for Portuguese Greens Soup

1 1/2 T. olive oil
1 medium onion
2 garlic cloves, minced
8 c. low sodium vegetable broth
5 medium red potatoes, thinly sliced
12 ounces package vegetarian chorizo
4 cups shredded kale leaves, tough stems removed
2 T. fresh lemon juice

Recipe Directions for Portuguese Greens Soup

  1. In a large soup pot, heat olive oil over medium low heat. Add onion & garlic. Cook, stirring, until tender but not browned, 5 to 10 minutes. Stir in broth, potatoes, salt & pepper. Bring to a boil. Reduce the heat & simmer until the potatoes are soft, about 20 minutes. Remove pot from heat. Using a potato masher lightly chunk the potatoes in the pot.

  2. Heat the chorizo in a medium skillet over medium-high heat. Cook, stirring, until browned. Add to the pot. Add kale, and simmer 10-15 minutes. Add lemon juice to soup just before serving.
