Portuguese Bean Soup Recipe

Makes 5 servings



Any hot sauce will do if you can't find sambal oelek. Chard or spinach can be substituted for the kale.

Recipe Ingredients for Portuguese Bean Soup

2 tsp canola oil
1 cup chopped onion
3 cups water
1 medium sweet potato, diced
1 tbsp sambal oelek
14 oz diced tomatoes
14 oz black beans
4 cups kale, chopped
4 tsp balsamic vinegar

Recipe Directions for Portuguese Bean Soup

  1. Heat oil.

  2. Cook onion 3 min.

  3. Add water, sweet potato, hot sauce. Bring to a boil, reduce heat, simmer 5 min.

  4. Add tomatoes and beans. Return to simmer.

  5. Add kale. Simmer 5 min. or until kale is tender.
