Recipe Ingredients for Portobellos with Potato and Swiss Chard

4 tbsp olive oil
4 garlic cloves, crushed
1 tsp salt
4 portobello mushrooms
3 medium potatoes, peeled
1/4 tsp black pepper
1/2 c or 1 shallot, chopped
12 oz or 1 bunch Swiss chard
1/4 c Parmesan cheese, grated

Recipe Directions for Portobellos with Potato and Swiss Chard

  1. Preheat oven to 450 F. In cup, mix 2 tbsp oil with half of crushed garlic and 1/4 tsp salt. Place portobello caps in pan with stem side up. Brush inside of mushrooms with oil mix. Add 1/3 c water to the pan; cover with foil, and bake until mushrooms are tender, about 45 minutes.

  2. Meanwhile, in 3-qt saucepan, place potatoes with enough water to cover; heat to boiling over high heat. Reduce heat to low; cover and simmer until tender, about 15 minutes. Drain potatoes, reserving 1/2 c cooking water. Return potatoes to saucepan; add pepper, remaining salt, and reserved water. With potato masher, mash potatoes until almost smooth.

  3. In nonstick 12-inch skillet, heat remaining 2 tbsp oil over medium heat until hot. Add shallot and cook until tender, about 5 min, stirring occasionally. Add remaining garlic, and cook 30 seconds, stirring. Increase heat to medium-high; add Swiss chard, and cook until leaves wilt and stems are tender-crisp, about 5 minutes, stirring occasionally. Stir in mashed potatoes.

  4. Spoon 1/4th of potato mixture into each roasted portobello cup; sprinkle with Parmesan, and serve.
