Difficulty: Medium Prep Time: 15 minutes Inactive Prep Time: 10 hours Cook Time: 4 minutes Yield: 2 servings This sandwich is great! Quick and delicious! Just be careful when slicing the mushrooms, as they are very delicate. You might want to buy an extra portobello or two in case you flub on one.

Recipe Ingredients for Portobello Panini

4 sun-dried tomatoes
8 ounces portabellao mushrooms (4 portobello mushroom caps, 2 ounces each)
1/4 cup Gorgonzola cheese, crumbled
1 tablespoon olive oil (extra virgin)plus
1 teaspoon olive oil
1 Salt
1 pepper

Recipe Directions for Portobello Panini

  1. Reconstitute the sun-dried tomatoes by soaking them in boiling water for 10 minutes.

  2. Remove the tomatoes from the water and chop them.

  3. Slice the stems off of the mushrooms so they can lay completely flat.

  4. Slice each cap in half so you have 8 round mushroom slices.

  5. Top half of the sliced mushroom cap with 1 tablespoon of tomatoes and 1 tablespoon of cheese.

  6. Top with remaining mushroom slices.

  7. Brush the top side of each "sandwich" with olive oil.

  8. Preheat a large, nonstick skillet or grill pan.

  9. Place the mushroom sandwiches in the pan carefully, oil side down, and cook for 2 minutes.

  10. Brush the top half with oil, flip, and cook for 2 minutes more.

  11. Season with salt and pepper, to taste, and serve.
