12 oz Egg Noodles
1 oz Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
4 oz White Button Mushrooms Packaged
8 oz Portobello Mushrooms
1 clove Garlic
14 oz Tofu, Firm
8 oz Light Sour Cream
1 cup Beef Broth
1 tbsp Italian Paste
0.25 tsp Garlic Powder
0.25 tsp Onion Powder
1 serving Cayenne Pepper
0.125 oz Coarse Kosher Salt
0.125 oz Pepper, Black
0.17 tsp Dill Weed, Dried
0.17 tsp Dill Weed, Dried

Recipe Directions for portobello mushroom stroganoff

  1. cook noodles according to pkg directions.

  2. heat a large nonstick or cast-iron skillet over high for 1 minute.

  3. Reduce heat to medium-low, add half of the oil and add onion. Saute for about 8 minutes or until caramelized. Add mushrooms and garlic. Add with remaining oil if needed and saute until cooked, about 5 minutes.

  4. Add tofu, sour cream, and tomato paste to blender and blend until smooth, then add to mushrooms in pan. Stir in seasonings except dill.

  5. Pour mushroom sauce over cooked noodles and top with dill.
