Recipe Ingredients for Portobello Mushroom Stroganoff

3 T olive oil
2 cloves garlic
1 onion
3/4 lb mushrooms
1 1/2 cups chicken broth
1/2 cup low fat sour cream
1 1/2 t corn starch
8 oz egg noodles
2 T chopped fresh parsley

Recipe Directions for Portobello Mushroom Stroganoff

  1. Saute onion, mushrooms and garlic in olive oil (butter). Remove to a bowl.

  2. Stir in the broth, bring to a boil and cook until reduced by 1/3.

  3. Reduce head to low and return mushrooms and onions.

  4. Stir sour cream and cornstarch together and stir it into the pot. Cook until thickened.

  5. Use sauce to top cooked egg noodles.
