This is an amazing mushroom soup!

Recipe Ingredients for Portobello Mushroom Soup

1/4 cup unsalted butter
3 chopped leeks
1 medium onion chopped
4 cups mushrooms, chopped (portobello)
1/4 cup flour
3 cups chicken stock or broth
2 oz sherry (4 tbsp)
2 cups skim milk
1/4 tsp cayenne pepper
1/4 tsp ground white pepper

Recipe Directions for Portobello Mushroom Soup

  1. Melt butter in heavy large pot over low-medium heat.

  2. Add leeks and onion and saute until they are tender (about 5 minutes).

  3. Add the mushrooms and saute for another 5 min.

  4. Reduce heat to low and add flour. Cook until the mixture thickens (about 3 min), stirring occasionally. Gradually stir in stock and half of the sherry. Bring soup to a boil, stirring.

  5. Reduce heat and simmer until the mixture thickens (about 10 min)

  6. Stir in the milk and simmer until slightly thickened(about 10 min).

  7. Stir in the cayenne and season with white pepper and salt. Stir remaining sherry into soup.

  8. Bring the soup to a simmer.

  9. Serve immediately.
