A wonderful but not low-calorie risotto.

Recipe Ingredients for Portobello Mushroom Risotto

1 stick butter
1 large onion, chopped
3 cloves garlic, minced
48 oz Swanson chicken broth
14 oz rice (Valencia short grain)
1 1/2 tsp. salt
1 pepper to taste
6 oz mushrooms (portobello), chopped
1 cup parmesan cheese

Recipe Directions for Portobello Mushroom Risotto

  1. Put the broth in a teakettle or small pot and bring it to a low simmer.

  2. Melt the butter; add the onion and sweat gently for about a minute, until the edges just start to turn clear. Add the garlic and sweat for another minute or so.

  3. Add the rice and saute, stirring constantly, for about five minutes or so, until the rice starts to turn translucent and just begins to brown.

  4. Add just enough chicken broth to cover the rice by about half an inch. Continue stirring constantly until all the broth has been absorbed; then add more broth again to cover the rice by about half an inch. Again, continue stirring until all the broth has been absorbed.

  5. Add broth again (this should be the third addition) and add the mushrooms, salt, and pepper. Continue stirring until all the broth has been absorbed. Add the last of the broth and continue stirring. When all the broth has been absorbed, stir in the parmesan cheese and enjoy!
