Vegetarian, Gluten Free variation on "pizzas"

Recipe Ingredients for Portobello Mushroom Pizzas

2 teaspoons olive oil
1 garlic clove, minced
12 ounces portobello mushroom caps, cleaned
6 ounces reduced-fat mozzarella cheese
4 fresh roma tomatoes

Recipe Directions for Portobello Mushroom Pizzas

  1. Seasonings: Freshly ground black pepper, Fresh basil, Dried oregano, thyme and onion powder

  2. Preheat oven to 400F

  3. Slice tomatoes in half lengthwise, cutting out woody or tough center pieces and emptying out liquid and seeds. Set aside. Add a healthy sprinkling of oregano, onion powder, roughly ground peppercorns and thyme to a small bowl. Add 1 teaspoon olive oil and combine well, crushing herbs together with the back of a spoon as you add the olive oil. Bake at 400F for 10 - 13 minutes, or until the tomatoes begin to soften and blacken on the outsides. Remove from the oven, chop roughly and set aside.

  4. Combine the remaining tablespoon of oil and the minced or crushed garlic in a small bowl and rub the cleaned mushroom caps on all sides with the mixture. Place the caps, top side down (so the cups of the mushrooms are facing up), on a greased baking sheet. Add more seasonings if desired.

  5. Fill the cups of the mushrooms evenly with the chopped roasted tomatoes. Arrange the cheese on top. Lay basil leaves on top.

  6. Bake at 450F until the cheese melts, about 3 - 5 minutes. If desired, add chopped fresh basil and a sprinkling of oregano to top it off.
