Recipe Ingredients for Portobello, Eggplant and Polenta Strata

6 oz Polenta
2/3 eggplant
1/2 cup Fiber One
1 tsp olive oil
2 cups mushrooms
1 cup onion
2 oz fat free cheese
1 1/2 oz parmesan cheese
12 oz spaghetti sauce

Recipe Directions for Portobello, Eggplant and Polenta Strata

  1. Place polenta slices in bottom of pie plate.

  2. Top with eggplant breaded with Fiber One cereal

  3. Saute onions and mushrooms, spread on top.

  4. Top with spaghetti sauce and cheeses. Bake.
