Portobello Burgers Recipe

You can use 1 additional tbs of oil in the recipe and 1 tbs of oil to fry the burgers, but it will raise the caloric content of the burgers quite a bit.

Recipe Ingredients for Portobello Burgers

8 oz textured vegetable protein (TVP)
4 oz provolone cheese, shredded (1 cup)
1 large egg, lightly beaten
1 tsp extra virgin olive oil, plus cooking spray to coat the pan
2 cloves garlic, minced
1 1/2 cup portabella mushrooms, (3 medium) stemmed and chopped
1 small onion, finely chopped
1 small zucchini, coarsely grated
1/4 cup tomatoes, sun-dried packed in oil, drained and chopped
1 salt and pepper, to taste

Recipe Directions for Portobello Burgers

  1. Combine TVP, cheese, egg, 3/4 tsp salt and 1/4 tsp pepper in a mixing bowl, mix well

  2. Heat oil in a large nonstick skillet over medium-high heat, add garlic and saute until fragrant, about 30 seconds

  3. Add mushrooms, onion and zucchini, saute until vegetables are soft and liquid has evaporated stirring often (about 8 min)

  4. Stir in tomatoes

  5. Add vegetable mixture to egg mixture, mix well

  6. Cover and let sit for 5 min

  7. Shape mixture into 6 3-inch patties

  8. Spray a nonstick pan with cooking spray and fry over medium heat about 3 minutes on both sides
