Another recipe I stole from "Three Fat Chicks on a Diet". Again, this is copied exactly and I haven't had a chance to try it yet.

Recipe Ingredients for Portobelle Penne

4 oz penne pasta
1 1/2 tbsp Brummel & Brown Spread
1 tsp garlic, minced
6 oz portabello mushrooms, sliced
1/4 cup white wine
1/4 tsp salt
1/8 tsp pepper
1/8 cup chives

Recipe Directions for Portobelle Penne

  1. Cook pasta, drain, and keep warm.

  2. In non-stick skillet, heat 1/2 margarine, add garlic and mushrooms.

  3. Cook until browned.

  4. Place pasta in dish and top with mushrooms.

  5. In same skillet, add wine and bring to a boil while scraping pan.

  6. Add remaining margarine, salt, and pepper.

  7. Pour sauce over pasta and mushrooms and sprinkle with chives.
