Recipe Ingredients for Portabello Tuna Melts

24 oz drained BUMBLE BEE Solid White Albacore in Oil
4 tbsp Mayo Mayonnaise with Olive Oil
2 tbsp Lemon Juice, Canned Or Bottled
0.13 cup Coriander Leaves
3 serving Sweet Relish
1/4 medium White Onion
2 stalk, large (11"-12" long) Celery
1/2 tbsp Pepper, Black
2 serving American Singles
6 slice, medium (1/4" thick) Tomatoes, Red, Ripe

Recipe Directions for Portabello Tuna Melts

  1. Scoop out and clean Portabello mushrooms. Place under a low broiler until tender (about 5 minutes).

  2. While the mushrooms are broiling... Combine in a bowl: drained tuna fish, mayonnaise, sweet relish, diced celery and onion, and fresh chopped cilantro. Add lemon juice and pepper to taste.

  3. Take out mushrooms and fill each one with the tuna salad. Top with a slice of tomato and then a slice of cheese. Place mushrooms back under the broiler until cheese melts and starts to brown. Serve and enjoy!
