Recipe Ingredients for Portabello Mushrooms with Goat Cheese Gratin

8 mushrooms, portabello
2 tbsp extra virgin olive oil, plus extra for drizzling
3 ounces goat cheese (cut into 8 half-inch slices)
1/2 cup parmesan cheese, freshly grated
1 garlic clove, finely chopped (optional)
1 tsp black pepper, ground
2 tbsp lemon juice (juice from one lemon, strained)
1 tbsp balsamic vinegar, for drizzling
2 tbsp chopped fresh flat-leaf parsley

Recipe Directions for Portabello Mushrooms with Goat Cheese Gratin

  1. Preheat the broiler.

  2. Remove the stalks from the mushrooms, place the caps on a broiler rack, gill-side up, brush with the oil and broil for 8 minutes.

  3. Remove from broiler. Sprinkle garlic over each mushroom.

  4. Place a slice of goat cheese over each mushroom, sprinkle with the Parmesan, pepper and lemon juice and broil for a further 5 minutes until golden and bubbling.

  5. Drizzle with balsamic vinegar and olive oil just before serving and garnish with parsley.
