Mary's Portabello Mushroom/Spinach Pizza

Recipe Ingredients for Portabello Mushroom/Spinach "Pizza"

4 mushroom caps, portabello
2 cups frozen spinach
1 large whole tomatoe
1/2 cup shredded parmesean cheese
50 g mozzerella cheese

Recipe Directions for Portabello Mushroom/Spinach "Pizza"

Clean and spray portabello mushroom caps with Pam "olive oil", salt and pepper to taste. Bake in 400 degree oven for 15-20 minutes. Remove from oven, divide 2 cups of frozen spinach between each mushroom cap. Add diced tomatoe pieces and mix of parmasean and mozzerella cheese. Bake at 400 degrees for 5-10 minutes.
