Recipe Ingredients for Portabello Lasagna Rolls

3/4 pounds lasagna noodles
2 teaspoons olive oil
12 ounces mushrooms
1/2 teaspoon salt
4 cups tomato sauce
15 ounces part-skim ricotta cheese
10 ounces frozen spinach
1 egg
1/4 cup parmesan cheese
3 ounces part-skim mozzarella cheese

Recipe Directions for Portabello Lasagna Rolls

  1. pre heat oven to 37

  2. cook noodles according to direction on the package

  3. drain them well and pread them out onto aluminum foil or waxed paper

  4. hea the oil in a large saute pan over medium-high heat.

  5. add the mushrooms and cook, stirring occasionally, until browned and all the liquid has evaporated, about 5 minutes.

  6. season with .25 teaspoon of salt.

  7. stir in 1.5 cups of the tomato sauce and simmer for 2 minutes.

  8. in a medium bowl combine the ricotta cheese, spinach, egg, the remaining .25 teaspoon of salt, a few turns of pepper, and nutmeg.

  9. spread 1 cup of tomato sauce on the bottom of a 9x12 inch baking dish.

  10. spread about 2 table spoons of the mushroom mixture, roll the noodle and place it into the baking dish.

  11. repeat with remaining noodels.

  12. spread the remaining 1.25 cups of sauce over the lasagna rools.

  13. top with grated cheeses, cover loosely with foil

  14. bake for 45 minutes.

  15. uncover and back for 15 minutes more.
