Low carb, but unfortunately high sodium. You might want to play with the type of cheese or other toppings to lower the sodium level.

Recipe Ingredients for Portabella Pizza

2 large mushrooms, portabella, stemmed and cleaned
1 tsp red wine vinegar
2 tsp olive oil
6 tbsp tomato sauce
2 oz ham
1/4 cup tomatoes, diced
1/2 cup spinach, chopped
2 cloves garlic, chopped fine
2 oz provolone cheese
2 oz parmesan cheese
1 tsp basil
1 tsp oregano

Recipe Directions for Portabella Pizza

  1. clean and stem the mushrooms.

  2. mix the vinegar and oil, brush lightly on the mushroom interior.

  3. divide the tomato sauce (if you use homemade, you might save some on the sodium, or use a low-sodium brand) - you can also use prepared pizza sauce - and spoon on each of the mushrooms.

  4. divide all the rest of the ingredients and build your pizza!

  5. brush again with the vinegar/oil mix before baking the pizzas. or, spray the top of the pizza with olive oil spray - just a spritz will do.

  6. bake at 400 degrees for approximately 20 minutes - cheese should be nicely melted and lightly browned.

  7. enjoy!
