A massive burger for dinner! Use a french roll, but after slicing it open, pull out lots of the useless white part, leaving just a nice thick crust!

Recipe Ingredients for Portabella Mushroom Burger

90 grams portabella mushroom
2 tablespoons balsamic vinegar
1/4 teaspoon basil
1/4 teaspoon tarragon
1/4 teaspoon pepper
1 teaspoon olive oil
75 grams french bread
1 cup lettuce
1 tomato
1 slice onion
1 slice swiss cheese

Recipe Directions for Portabella Mushroom Burger

  1. Take one portabella mushroom cap and wipe with a damp paper towel to clean.

  2. Mix next 4 ingredients and pour over the cap in a shallow dish.

  3. Let stand for about 15 minutes.

  4. Brush drained cap with olive oil and grill on both sides for about 6 minutes each, brushing with additional oil as needed.

  5. Split a french roll and pull out some of the insides.

  6. Spread with stoneground, whole grain mustard.

  7. Place swiss cheese slice on mushroom cap just before placing it on the roll.

  8. Add sliced tomato, onion and spinach leaves!

  9. Yum!
