Recipe Ingredients for Portabella Mushroom and Barley Soup

10 ounce Portabella Mushrooms, diced
2 tablespoon Olive oil
1 medium Onion diced
2 stalks Celery, diced
1 medium Carrot, peeled and diced
1 teaspoon Garlic minced
1 teaspoon Flour
8 cups Vegetable Broth
2 tablespoon Parsley, minced
1/2 cup Barley

Recipe Directions for Portabella Mushroom and Barley Soup

  1. In a large saucepan, heat the oil over medium heat. Add the onion, carrot, and celery. Cook for 5 minutes.

  2. Add garlic and mushrooms and cook for 5 more minutes.

  3. Whisk in the flour and cook for 3 minutes. Whisk in the broth and bring to a boil.

  4. Reduce heat and simmer for 45 minutes. Add the parsley and barley and cook for 10 minutes longer.

  5. Serve warm.
