Tasty portabella sauteed and with a sweet and pungent sauce.

Recipe Ingredients for Portabella in Balsamic Reduction

8 oz portabella mushrooms, sliced
1 1/2 oz shallot, chopped (1 medium shallot)
2 tbsp butter
2 tbsp Worcestershire sauce
1/4 cup Balsamic Vinegar

Recipe Directions for Portabella in Balsamic Reduction

  1. In a medium size frying pan (do NOT use teflon, use steel or cast iron if you want a good sauce) melt 1 Tbsp butter on medium high until it starts to smell nutty, then add the chopped shallot. Reduce heat to medium and sautee until the shallot is getting translucent.

  2. Add the portabella mushrooms and let them sautee but do not allow them to overcook/reduce too much.

  3. Take the cooked mushrooms out of the pan and add the balsamic vinegar and the worcestershire sauce. Let the liquid bubble and reduce by about half.

  4. Check the sauce for consistency. At this point I usually add the rest of the butter if needed, this will enrich the sauce and mellow the flavors. Add salt and pepper to your taste.

  5. Set the heat to low, add the mushrooms back and let them soak in the flavor of the sauce.

  6. For serving suggestions, I do serve them over basmati rice meddley or white rice.
