This dish is a traditional Phillipino and Vietnamese rice soup, with chicken, garlic, ginger and garnished with green onion and cilantro. The Vietnamese version of this dish has more ingredient where at the Phillipino one that I have made is more simple. This dish is a warm, delicious bowl of comfort food perfect for a cold and rainy day.

Recipe Ingredients for Porridge

1 oz vegetable oil
3 lb chicken thighs
1 cup uncooked white rice
14 cups water
2 1/2 bouillon cube
2 tsp sesame oil
1/2 cup garlic, chopped
1/2 cup ginger, peeled and sliced
1 cup green onion, sliced thinly
1 cup cilantro, chopped

Recipe Directions for Porridge

  1. Add the oil garlic and ginger to a soup pot over high heat.

  2. Saute just for a minute before adding the chicken wings.

  3. Saute for about five minutes until the skin starts to take on some color but is not browned.

  4. Add the rice to the pot and combine well.Stirring for about 2 or 3 minutes.(do not give in to the urge to add more rice, the rice is going to swell and the soup will be very thick)

  5. Add the water and bring to a boil.

  6. Add the bouillon cubes (chicken flavored preferably) and stir until dissolved.

  7. Boil uncovered for one hour.

  8. You may add more water and the end if it is too thick only a half cup at a time until it is the right consistency. The soup should be somewhat thick but still very soupy.

  9. Add the sesame oil at the very end.

  10. Divide into bowls and garnish generously with the onions and cilantro.
