Healthy Breakfast cookie for when you are in a hurry.

Recipe Ingredients for Porridge Oats Breakfast Cookies

1 cup whole wheat flour
1 tsp baking soda
3/4 tsp salt
1/2 tsp allspice
2 tsp cinnamon
2 tsp ginger
2 eggs
1/3 cup vegetable oil
1 1/4 cups unsweetened applesauce
3/4 cup brown sugar
1 tbsp grated orange rind
2 tsp vanilla
3 cups porridge oats
3/4 cup chopped almonds
1 cup dried cranberries
1/8 cup soy protein

Recipe Directions for Porridge Oats Breakfast Cookies

  1. Preheat oven to 350F

  2. Combine:

  3. 1 cup whole wheat flour

  4. 1 tsp baking soda

  5. 3/4 tsp salt

  6. 1/2 tsp allspice

  7. 2 tsp cinnamon

  8. 2 tsp ginger

  9. Beat together:

  10. 2 eggs

  11. 1/3 cup vegetable oil

  12. 1 1/4 cups unsweetened applesauce

  13. 3/4 cup brown sugar

  14. Add to the wet ingredients:

  15. 1 tbsp grated orange rind

  16. 2 tsp vanilla

  17. 3 cups Rogers Porridge Oats

  18. 3/4 cup chopped almonds

  19. 1 cup dried cranberries

  20. 1/8 cup soy protein powder

  21. Add flour fixture and stir well. Add dried cranberries and stir.

  22. Use 1/4 cup of cookie dough for each cookie. Place on greased cookie sheet and press down. Bake for 15-20 minutes or until lightly browned. Let cool before removing from cookie sheet.

  23. Yield: 20 cookies
