Recipe Ingredients for Pork "Wellington"

706 grams Pork Tenderloin
22 grams dried apples
1 Pillsbury Pie Crust
100 grams Proschuitto
1 egg, large
1 tsp cornstarch

Recipe Directions for Pork "Wellington"

  1. Place a rack in the upper third of the oven and heat to 400 degrees F.

  2. Whisk the egg and water in a small bowl and set aside. Place the apple into a mini food processor and process for 20 to 45 seconds until they are the size of a medium dice. Set aside.

  3. Trim the pork tenderloin of any excess fat and silver skin. Slice the tenderloin down the middle, lengthwise, creating two separate pieces.

  4. Lay out a piece of 12 x 16 inch parchment paper on the counter and arrange the pieces of proscuitto in the center, overlapping them enough to create a solid layer as long as the tenderloin. Top with a second piece of parchment and using a rolling pin, roll over the top so the prosciutto pieces will adhere to each other. Remove the top layer of parchment, and place the tenderloins in the middle of the proscuitto. Spread the dried apples in between the two pieces of tenderloin and push back together to the apples are held between them. Using the parchment to assist, wrap the proscuitto around the tenderloin to completely enclose in a package.

  5. Sprinkle the counter with flour and roll out the crust to approximately 12 x 14 inches. Roll the crust around the meat, and place with the overlapped edge into a parchment lined baking pan.

  6. Brush the entire pastry with the egg wash. Bake for 25-30 minutes or until the pork reaches an internal temperature of at least 140 degrees F.

  7. Remove from the oven, transfer to a cooling rack and let rest for 10 minutes before slicing and serving.
