Pork Verde's Burritos with brown rice

Recipe Ingredients for Pork Verde's

1 pound tomatillos (about 15)
1 cups fat-free, less-sodium chicken broth
1/4 teaspoon salt
2 jalapeno pepper, seeded and chopped
1 serrano pepper
2 garlic cloves
1 yellow onion
3 tablespoons cumin
6 flour tortillas
1 cup brown rice
1 pound Pork Sirloin Roast

Recipe Directions for Pork Verde's

  1. Preheat oven to broil

  2. Cut tomatillos and peppers in half, cube onions and garlic and place them on a cookie sheet and put in the oven to roast for about 5 minutes.

  3. Add all ingredients into the blender and puree.

  4. Brown meat of choice (my personal favorite is Pork Tip Sirlion Tip Roast (98% Fat Free 2% Fat)

  5. Once brown, add 1/2 cup chicken broth and verde's sauce and bring to a boil.

  6. Turn heat down to low and cover, cook for about 1.5 hours or until meat can be shredded easily.

  7. Add 1/2 cup of chicken broth and cook for 30 minutes.

  8. Serve wrapped in a tortilla with brown rice!
