Quick hearty stew with tender pork chops and vegetables.

Recipe Ingredients for Pork and Vegetable Stew

3 tbsp soy flour
1/2 tsp salt
1/2 tsp pepper
522 g boneless pork chops
2 tbsp grapeseed oil
76 g onion, chopped
117 g celery, chopped
229 g green bell pepper, chopped
3 cloves garlic, chopped
194 g zucchini, chopped
202 g tomatoes, diced
500 ml chicken broth
1 tbsp fresh basil, torn
2 tsp fresh oregano, chopped

Recipe Directions for Pork and Vegetable Stew

  1. Combine flour, salt and pepper in plastic bag. Add cubed pork pieces and shake to coat. Set aside.

  2. Heat 1 tablespoon of oil in saucepot. Add onions, celery and green pepper. Saute for 5 minutes until tender. Add garlic and saute for 30 seconds. Transfer vegetables to bowl and set aside.

  3. Heat remaining oil and add pork. Saute pork until golden brown, about 5 to 10 minutes.

  4. Return vegetables to pot. Add broth, bring to boil and simmer about 10 minutes. Add zucchini and tomatoes and simmer additional 10 minutes. Stir in basil and oregano, season with salt and pepper, and serve.
