1 lb. pork tenderloin
1/4 c. mustard
1/4 c. dried apricots, chopped
4 oz. walnuts, chopped
2 oz. goat cheese, crumbled

Recipe Directions for Pork Tenderloin stuffed w/mustard, dried apricots, walnuts, and goat cheese

  1. Salt & pepper loin

  2. Butterfly loin

  3. Mix remaining ingredients and stuff loin

  4. Tie at several intervals with twine or secure using toothpicks

  5. Brown loin on stovetop

  6. Cool and wrap with foil

  7. Bake at 350 until meat reaches 160
