Recipe Ingredients for Pork Tenderloin stuffed with dates and pecans

455 g pork tenderloin
6 dates, medjool
25 g pecans
1 tsp olive oil
1 tsp sage
1/4 cup white wine
1 1/2 cup vegetable broth
2 tbsp cornstarch

Recipe Directions for Pork Tenderloin stuffed with dates and pecans

  1. Slice dates and remove pits. Replace with pecan halves.

  2. Slice tenderloin lengthwise, put dates in the slit, and press together to close.

  3. Roast at 350 F for about 40 minutes, until internal temp of 160 F.

  4. Remove from oven, place on a plate, and tent with foil while making sauce.

  5. Put roasting pan over med-high heat.

  6. Pour in wine, and simmer until reduced by half.

  7. Stir cornstarch into vegetable broth, then into the roasting pan. Heat through, stirring to prevent burning, until thickened and cooked.
