Pork tenderloin with onions and dried cranberries

Recipe Ingredients for Pork tenderloin with Onions

2 lb pork tenderloin
1 t salt
1/4 t ground black pepper
1 T olive oil
3 cups sliced onion
1/4 cup light beer, (use 1 cup - about 3/4 cup evaporates)
1 cup fat free low sodium chicken broth
1/2 cup dried cranberries

Recipe Directions for Pork tenderloin with Onions

  1. Sprinkle pork with 3/4 teaspoon salt & pepper.

  2. Heat olive oil in skillet over medium heat. Add pork; cook 6 minutes, browning all sides

  3. Remove pork from the pan and add sliced onions to pan and cook until brown (about 8 minutes) Remove onion from pan and set aside; sprinkle with 1/4 teaspoon of salt.

  4. Add beer to pan and cook over high heat until reduced to 1/2 cup.

  5. Return pork and onions to pan, add chicken broth and bring to boil. Cover and reduce heat, simmer for 30 minutes.

  6. Still in cranberries, cover and cook 30 minutes until pork is tender.

  7. Remove pork and let stand 5 minutes. Cut into slices and serve with onions and cranberries
