Pork Tenderloin with Cranberries and Apricot

Recipe Ingredients for Pork Tenderloin with Fruit

1 lb pork tenderloin
1 cup cranberries
1 cup dried apricots
3 tbsp water
2 tsp dried rosemary
1 tsp pepper

Recipe Directions for Pork Tenderloin with Fruit

  1. Combine cranberries, apricots,water,rosemary,and pepper. Put in a saucepan and ring to a boil. Reduce heat and simmer for ten minutes.Cut a slit lenghtwise down tenderloin to within 1/2 inch from bottom.Open up tenderloin so that they lie flat.Cover with plastic.With a meat mallet flatten meat to 3/4 of an inch.Remove plastic.Put fruit mix on pork.Roll up pork

  2. Tie it with butchers string.Bake at 400 for 30-35 minutes,or until meat thermometer reads 160 degrees.
