Recipe Ingredients for Pork tenderloin with apple and rosemary

2 tsp canola oil
8 oz pork tenderloin, cut into 2 pieces
1 onion, sliced thin
1/2 tsp dried rosemary
1/4 tsp curry powder
1/4 cup apple juice
1 tsp cider vinegar
1 apple, firm cored halved and sliced thin
2 tsp currants

Recipe Directions for Pork tenderloin with apple and rosemary

  1. Heat the oil in a skillet over medium high heat. Sear the pork on all sides, then remove to a plate and keep warm.

  2. Lower the heat to medium low, add the onion, rosemary and curry powder, cook until the onions soften about 5 min.. Add the apple juice and vinegar and cook for 2 min.. Add the apples and currants and return the pork to the pan. Cover and cook for about 15 min. until the pork is just cooked through.

  3. Slice the pork and serve with the apples and onions.
