Pork & Sweet Potatoes - slow cooker for work nights

Recipe Ingredients for Pork & Sweet Potatoes

4 lbs pork loin, cut into 3/4" thick pcs - 5lbs uncooked
3 lbs sweet potatoes, raw peeled and sliced
1 cup chopped onion
1 cup chopped green bell pepper
4 cups diced tomatoes, 1 can (14.5 ounces)
4 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon black pepper

Recipe Directions for Pork & Sweet Potatoes

  1. Spray crockpot with cooking spray or lightly oil. Combine pork, sweet potatoes, onion, and green bell pepper. Combine tomatoes with brown sugar, cinnamon and black pepper; pour over pork mixture in the slow cooker.

  2. Cover and cook on LOW setting for 8 to 10 hours. Stir to mix before serving
