Recipe Ingredients for Pork Stew

450 grams Fresh Boneless Center Cut Butterfly Loin Chops
1/4 tsp Cumin
1 tsp Paprika
1 tsp Fennel Seed
1 tsp Paprika
400 grams Yam
400 grams Butternut Squash
1 clove Garlic
1 medium (2-1/2" dia) Onions
400 grams Tomatoes, Red, Ripe
1/4 cup Tomato Puree
1 cup Soup, stock, chicken, home-prepared

Recipe Directions for Pork Stew

  1. Fry off the cubed pork with the paprika, cumin and fennel seeds. Add the onion and garlic, just for a few minutes.

  2. Transfer to a casserole dish, add a small amount of the stock to the frying pan to de-glaze. Give it a good scrape to get all the yummy bits into the casserole.

  3. Add the puree and a tin of tomatoes. You may want to break up any bigger tomatoes.

  4. Depending how runny you like your stew add some of the stock. Remember the potato and squash will release quite a lot of water.
