Lean pork cooked with squash and tomatoes. Low calorie, high in flavor and nutients. Use long sqash to ensure pork is tender.

Recipe Ingredients for Pork and Squash

2 lb. squash
1 lb. pork
2 tomatoes
1 small onion
3 cloves garlic
2 tbls soy sauce
1 tsp salt
1/4 tsp black pepper
3/4 cup water

Recipe Directions for Pork and Squash

Saute onion in deep skillet for 2 minutes. Add garlic in whole cloves and saute for another minute the add pork to skillet and brown evenly. Add squash, soy sauce, salt, and water, simmer covered for 10 minutes. Cut tomatoes into wedges and add to skillet. Simmer for another 10 - 15 minutes and serve over brown rice.
