A pretty cool way to use up leftover meat - you could use chicken or beef in this dish as well. Note: The beans, corn, tomatoes, and tomato sauce are the weights one can yielded. The rice weight is after it is cooked. (Approx 1 cup uncooked). The pork roast is leftover so it has already been cooked

Recipe Ingredients for Pork Spanish Rice

336 g Pork roast
166 g onion
145 g bell pepper
25 g garlic
424 g Bush's Black Beans
429 g Del Monte Corn
407 g beckmans diced tomatoes
380 g vine ripe tomato sauce
880 g White Ricde

Recipe Directions for Pork Spanish Rice

  1. Cook rice according to package directions - set aside

  2. Cut pork, onion, bell pepper and garlic

  3. Heat oil in skillet - add cut items cook until onions and peppers are tender

  4. Add remaining items except rice and bring to a boil

  5. Add rice and any seasonings you want (I used Mrs. Dash Extra Spicy)

  6. Add approximately 1 cup water

  7. Simmer until water is absorbed

  8. Serve with tortillas
