Recipe Ingredients for Pork Souvlaki with Tzatziki

1 1/2 lbs (675 g) pork tenderloin
2 tbsp lemon juice
1 tbsp extra-virgin olive oil
1 tsp garlic, minced
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1 c cucumber, shredded
1/2 tsp salt
3/4 c plain yogurt
1 tbsp garlic, minced
2 tbsp chopped fresh dill, or mint
1 tbsp lemon juice

Recipe Directions for Pork Souvlaki with Tzatziki

  1. For tzatziki: mix cucumber with salt; let stand for 10 min. Squeeze out moisture.

  2. In small bowl, mix cucumber, yogurt, garlic, dill and lemon juice.

  3. Meanwhile, trim and cut pork into 1-inch cubes.

  4. In large bowl, whisk together lemon juice, oil, garlic, oregano, salt and pepper; add pork and stir to coat. Marinate for 10 min or cover and refrigerate for up to 6 hours.

  5. Thread pork onto metal skewers; brush with any remaining marinade. Place on greased grill over med-high heat; close lid and grill, turning halfway through, until juices run clear when pork is pierced and just a hint of pink remains inside - about 12 min.

  6. Remove from skewers. Serve with rice and a salad or with tomatoes, sliced red onion, lettuce and tzatziki on pitas.
