This recipe was found on the Canadian Living website. The recipe calls for 1/4 cup lemon juice and olive oil, but I have reduced that amount for the calorie counting as some of it will be lost from the marinade. Thus, this is just a guess as to what the actual calories and fat will be. The recipe also calls for 3/4 cup of prepared tzatziki sauce and 6 Greek-style pita breads, but I am omitting those since people will just help themselves to it as they please. The pork called for in the recipe is 680g boneless pork loin or pork tenderloin. My understanding is that 1/3 of the weight is lost in cooking, and since I mainly only had cooked pork to pick from on CC for reliable ingredients, I've tried to adjust accordingly. "As well as a great family dinner, this is ideal for lunch. Make extra pork and for dinner, serve it with rice and Greek salad. The next day, put the extra cooked cubes in a container to enjoy cold for lunch. Send along some pita bread and put some tzatziki in another container for your child to assemble a very tasty sandwich at school."

455 grams Pork, Fresh, Loin, Tenderloin
0.17 cup Lemon Juice
0.17 cup Olive Oil
4 clove Garlic
1 tbsp Oregano, Ground
1/4 tsp Salt, Table
1/4 tsp Pepper, Black

Recipe Directions for Pork Souvlaki (Canadian Living)

  1. Trim and cut pork into 1-inch (2.5cm) cubes. In large bowl, whisk together lemon juice, oil, minced garlic, oregano, salt and pepper; add pork and stir to coat. Marinate for 10 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)

  2. Evenly thread pork onto six 8-inch (20cm) skewers; place on foil-lined baking sheet. Brush with marinade. Broil 6 inches (15cm) from heat, turning halfway through, until just a hint of pink remains inside, about 12 minutes.

  3. Optional: Spread tzatziki over each pita. Remove pork from skewers and place on pitas; fold over.
