This is a very popular Filipino pork stew. It is my Mom's recipe and it turns out perfect each time I cook it. It's a great stew to enjoy with white jasmine rice. A wonderful family dish.

Recipe Ingredients for Pork Sinigang

0.5 tbsp Salt, Table
4 cup Beans, Snap, Green
8 4 oz raw Pork Spareribs Untrimmed
2 cup Okra
4 serving, raw Daikon Radish
2 fruit (3" x 1")(2 g) Tamarinds
3 medium raw Tomato Roma
1 onion Yellow Onion

Recipe Directions for Pork Sinigang

  1. Ingredients (most found in Filipino Asian Markets like Seafood City): *Wash All*

  2. -2 Ibs. Pork Butt, Pork Picnic, or Pork Sparerib (ask Butcher to slice for sinigang), I prefer Pork Picnic or Sirloin and cut into smaller pieces if they are too big.

  3. -Water, enough to cover the meat in a pot.

  4. -1 pouch of Tamarind Base (I believe it?s Knorr or Pamana brand)

  5. -2 tomatoes, diced

  6. -1 onion, sliced

  7. -1/2 Ib. of Okra, cut the tops off

  8. -Handful of Sitaw (string beans, they are very long), throw out the ends and cut them 2-3in. apart

  9. -Kangkong (AKA Water Spinach) optional, but this completes sinigang) they are the long leaves, only use the good looking leaves, pull them out individually from the big stem.

  10. -1 small piece of Labanos (AKA Daikon Radish), wash, peeled and slice thickly

  11. -1 or 2 pieces of yellow chili

  12. -4 pieces of taro peeled

  13. -Salt (optional)

  14. -Patis (Fish sauce)-Optional

  15. Preparations, (estimated cook time is about 40min):

  16. 1. Put tomato, onion, yellow chili, pork and water in a pot on High Heat

  17. 2. Boil until pork is slightly tender (Dark Gray color)

  18. 3. Lower the heat to simmer and skim off the meat debris/bubbles on top of the water with a spoon.

  19. 4. Add taro and salt to your liking.

  20. 5. When pork is tender (light gray color), add okra, daikon radish, and string beans.

  21. 6. When the veggies are almost cooked, pour tamarind base and a little patis.

  22. 7. Add kangkong and cover

  23. 8. Cook for 1 minute and turn off the heat.
