3.32 kg is a very large 7.3 lb roast. I reduced size above to 3 kg as I cut off the rind and fat which came with it. One serving is 75 grams on scale (despite what serving size says here, weigh 75 grams.

Recipe Ingredients for Pork, Pulled CB

3 kg pork shoulder roast
1 tbsp parsley
1 tbsp cumin
1 tbsp onion powder
1 tbsp chili powder
1 tbsp cayenne pepper
1/2 tbsp salt
1 tbsp paprika
1/2 cup splenda brown sugar blend

Recipe Directions for Pork, Pulled CB

  1. Mix all ingredients except roast to make dry rub.

  2. You need to make a brine to soak roast for 6 to 8 hours. Brine is: 1/2 cup salt, 1/4 cup Splenda Br. Sugar, 2 qts cold water, 2 bay leaves, and 3 tbsp of the dry mix.

  3. Put the roast into a large dutch oven then pour brine over to cover.

  4. After soaking, pour off brine, pat roast dry, and put the dry rub all over it, covering all sides, ending with fatty side up in the pan.

  5. Preheat oven to 325 degrees, insert covered roast, and roast for 1/2 hour. Then turn down oven to 250 degrees and roast should be falling apart done in about 6 hours. You can then turn off the oven and leave it for another hour or two if you wish.

  6. There is no need to add water as roast should create plenty of juice. Mine made 1670 cooked grams of meat (no fat) and 2 cups liquid.

  7. When done, pour off juice and allow fat to rise to top. Skim off fat once it has settled a bit.

  8. You'll need a large bowl. Move a bit of the meat into thie bowl and shred with two forks. Add more meat and shred. Continue til finished. Then, pour the reserved juice over all and incorporate well. Add more of the seasoning if you wish.

  9. Serve on a bun, with a bit of added barbecue sauce if you feel you need it; good with coleslaw.
