Recipe Ingredients for Pork Potato Pie

10 oz pork roast , cubed
2 lbs potatoes, peeled & cubed
1/3 cup 2% milk
4 tablespoons becel (margarine)
1/4 teaspoon pepper
1 medium onion
1 garlic clove
1/4 cup flour
14 1/2 oz chicken broth, low sodium
1 tablespoon Dijon mustard
1/4 teaspoon dried thyme
4 tablespoons fresh parsley, minced, divided

Recipe Directions for Pork Potato Pie

  1. Cook potatoes until tender, drain well and mash with milk, margarine and pepper.

  2. Grease a shallow 1.5 quart baking dish and spread 1.5 cups of the potatoes in the dish.

  3. In a skillet, saute onion and garlic in margarine until tender.

  4. Stir in the flour until blended.

  5. Gradually stir in broth, mustard, thyme and 2 tsp parsely. Bring to a boil and cook for 2 minutes or until thickened.

  6. Stir in pork and cook to heat.

  7. Pour meat/gravy mixutre over potatoes in baking dish.

  8. Pipe or spoon remianing potatoes over top.

  9. Bake, uncovered, for 35-40 minutes or until potatoes are lightly browned.

  10. Sprinkle with remaining parsley.
