Recipe Ingredients for Pork Piccata

1 1/2 lbs. pork tenderloin
1/2 c. all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
3 T. olive oil
1/2 c. dry white wine
1/4 c. lemon juice
3 T. light margarine
1/4 c. fresh parsley, chopped
1 1/2 T. capers

Recipe Directions for Pork Piccata

Cut tenderloin into 2 oz. medallions and flatten to 1/4" thickness using a meat mallet. Combine flour, salt, pepper. Dredge pork in flour mixture and cook 1/2 of pork in 1-1/2 T. of hot oil in a large skillet over medium heat until lightly browned. (About 2 mins. each side.) Remove from skillet and keep warm. Repeat for remaining pork adding oil as needed. Add white wine and lemon juice to skillet, cook until thoroughly heated. Add margarine, parsley and capers, stirring until butter is melted. Arange pork medallions over whole-wheat fettucine, drizzle with wine mixture.
