Boneless Pork Loin in a TexMex Mole style gravy

Recipe Ingredients for Pork Mole

4 pound boneless pork loin
1 tsp. chili powder
1 tsp. granulated garlic
4 beef bouillon cubes
4 cups hot water
3 tsp. cocoa powder
3 tsp. canola oil
4 tsp. flour
1 tsp. pepper
1 small onion, chopped
6 oz. orange juice
16 oz. water

Recipe Directions for Pork Mole

  1. Heat Dutch oven. Trim all fat from pork loin. Make slits with a knife. Stuff with most of seasoning. Rub 1 tsp. oil on meat. Sprinkle on rest of spices.Add 2 tsp. of oil to hot dutch oven. Put in meat. Sear all sides. Remove. Add onions and let sweat. Remove onions. Add flour. Stir around. Add hot water.

  2. Add bouillon cubes and orange juice. Return meat and onions to pot. Cover and cook on medium low heat 4 hours or until done.
