1 c. bread crumbs
1/2 c. parmesan cheese
2 eggs
1 lb. pork tenderloin
1/4 c. olive oil
1/2 tsp. salt
1/2 tsp. pepper

Recipe Directions for Pork Milanese with Tomato Arugula Salad

Cut tenderloin into 8 pieces. Pound thin. Salt and pepper each piece. and dip into beaten egg mixture. Then dredge the pork into the crumb mixture, coating completely. Heat 1/4 C. oil in a heavy large skillet over midiume high heat. Add the pork and cook until golden brown, 3 minutes per side.
