Recipe Ingredients for Pork Milanese with Arugula Tomato Salad

8 oz pork chops, boneless, trimmed of fat
1/4 c dry bread crumbs
1 tbsp grated parmesan
1/4 tsp garlic powder
1/2 egg
1/2 tbsp olive oil
2 c baby arugula
1/2 c cherry tomatoes, sliced in half
3 tbsp balsamic vinaigrette

Recipe Directions for Pork Milanese with Arugula Tomato Salad

  1. Preheat oven to 350 degrees F.

  2. Place each pork chop between two pieces of plastic wrap. Using a meat mallet, pound to about 1/4-inch thickness. Season each side with salt and pepper to taste.

  3. n a shallow dish, mix bread crumbs, cheese, and garlic powder. In another bowl, lightly beat egg. Dip each chop in egg, allowing excess to drip back into bowl, then dredge in bread crumb mixture. Place on a baking sheet.

  4. In a large skillet, heat olive oil over medium heat. Place chops in pan and brown for 2 to 3 minutes per side. Transfer back to baking sheet and bake for 7 minutes.

  5. While chops are baking, place arugula and tomatoes in a large bowl and toss with dressing.

  6. Plate chops and serve with arugula salad.
