from the Oct/Nov 2009 "Healthy Cooking". Nice and tangy sauce. I use Boetje's mustard made in my hometown of Rock Island, Illinois.

Recipe Ingredients for Pork Medallions in Mustard Sauce

1/2 cup fat free chicken broth
2 tbsp. apple juice
4 1/2 tsp. whole grain mustard
1 lb. pork tenderloin, cut into 1/2" slices
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. olive oil
1 garlic cloves, minced
1 tsp. cornstarch
2 tbsp. cold water
1 tbsp. minced fresh parsley

Recipe Directions for Pork Medallions in Mustard Sauce

  1. In small bowl, combine the broth, apple juice, and mustard.

  2. Sprinkle pork with salt and pepper, brown in a large non-stick skillet in the olive oil. Remove and keep warm.

  3. Add garlic to the pan, saute 1 min. Add the broth mixture; stirring to loosen any browned bits from the pan. Bring to a boil, reduce heat and simmer 6-8 min. or until liquid is reduced to about 1/3 cup.

  4. Return pork to the pan; cover and cook over low heat 3-4 min. or until meat is no longer pink.

  5. Remove meat to a platter.

  6. Combine cornstarch and water, add to pan. Bring to a boil; cook and stir for 2 min. or until thickened.

  7. Pour sauce over meat. Sprinkle with parsley.
