Recipe Ingredients for Pork medallions with mustard & capers

3/4 pound pork loin
1 tsp olive oil
1 garlic clove
2 tablespoons mustard
2 tablespoons capers
1 cup apple juice

Recipe Directions for Pork medallions with mustard & capers

In a large non-stick skillet, brown slices of pork loin over high heat in olive oil. Add garlic to the pan after flipping the pork. when the meat is browned on both sides, add remaining ingredients. Stir simmer until pork is firm, just a few minutes. Transfer pork to a warm platter, and reduce liquid in pan til thickens slightly; rewarm pork in sauce.
