Something I just made up as a main. Haven't tried it yet, but will tonight!

Recipe Ingredients for Pork Medallions with Horserasdish, Sage and Tarragon

2 tbsp olive oil
8 ounce pork tenderloin
1 tablespoon horseradish
1 tablespoon dried sage
1/2 cup white wine
1 medium onion, diced
1 tablespoon dried tarragon
1 teaspoon salt
1 teaspoon ground black pepper

Recipe Directions for Pork Medallions with Horserasdish, Sage and Tarragon

  1. Remove sliver skin from pork tenderloin or have butcher do it for you

  2. Dice onion

  3. Mix sage and tarragon in a spice grinder or mortal and pestle

  4. On med-high heat add oil to a skillet or thick bottomed pan

  5. When oil is hot add pork tenderloin to brown (4-5 min each side)

  6. Reduce heat to low, add salt and pepper and cover pan for 5-8 min

  7. Add onions, white wine, and dried spices, cover pan and let simmer gentle for another 10-15min (check after 10)

  8. Remove pork medallions, place on a warm plate and cover with pan lid

  9. Raise heat to medium (medium-high depending on the heat of your stove). Scrape up the brown bits from the bottom of the pan using a wooden spoon and the liquids remaining. Let simmer and reduce for two min. Spoon over individual pork medallions and serve!
