Delicious marinade for a tasty pork meal

Recipe Ingredients for Pork Marinated in Orange, Ginger and Toasted Paprika

1 cooking spray
1/2 c onion, finely chopped
2 cloves garlic, minced
1 tbs paprika
2 c orange juice
1 tbs ginger root, coarsely chopped
1 1/8 lb pork loin, cut into 1/2 inch thick mediallions

Recipe Directions for Pork Marinated in Orange, Ginger and Toasted Paprika

  1. Spray medium saucepan, then heat. Saute onion & garlic until soft, then add paprika and cook until lightly toasted - about 2 minutes.

  2. Raise heat to high, add orange juice and ginger and bring to a boil. Cook, stirring occasionally, until liquid (including solids) is reduced to less than 1 cup.

  3. Remove marinade from heat and let cool completely at room temperature. Pour over pork medallions, let marinate for an hour or more. Broil medallions for 20 minutes or until cooked through.
