Recipe Ingredients for Pork Loin Skillet

24 oz pork loin, 1 inch thick (1 1/2 lb)
1/4 cup beef flavored broth or chicken broth, reduced sodium
4 medium potatoes, cut into fourths
4 medium carrots, cut into 1-inch pieces
4 medium onions, cut into fourths
1 teaspoon cayenne pepper
2 servings (1/2 teaspoon) lemon-pepper seasoning
1 teaspoon oregano, crushed leaves
1/2 teaspoon garlic powder
1 chopped fresh parsley to taste

Recipe Directions for Pork Loin Skillet

  1. Remove fat from pork. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 5 minutes, turning once, until brown.

  2. Add broth, potatoes, carrots, onions, cayenne pepper, lemon and pepper, oregano, and garlic powder to skillet. Heat to boiling; reduce heat. Cover and simmer about 30 minutes or until vegetables are tender and pork is slightly pink in center. Sprinkle with parsley.
