Pork Loin with Roasted Veggies - This recipe is for a 2 pound pork loin.

Recipe Ingredients for Pork Loin with Roasted Veggies

36 oz Pork, Fresh, Loin, Whole
3 tsp Prepared Dijon Mustard
1 small Onions
1 cup, chopped Carrots
4 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
1 cup, water
5 clove Garlic
3 tsp Ground Black Pepper
2 tbsp Rosemary, Fresh
1 dash Salt, Table
0.27 g Original Cooking Spray

Recipe Directions for Pork Loin with Roasted Veggies

  1. Heat oven to 325 degrees.

  2. Spray 9x13 pan with Pam cooking spray.

  3. Chop onion, carrots and potatoes and put in pan.

  4. Rub pork loin with mustard.

  5. Sprinkle with chopped rosemary, salt, pepper, and minced garlic.

  6. Add trimmed pork loin fat side up.

  7. Add water to pan.

  8. Place pan in oven and cook (30 to 40 minutes per pound) until internal temp at thickest part is 145 degrees.

  9. Turn loin over about one hour into cooking.

  10. Let sit 10 minutes before slicing.

  11. ENJOY!
