Shallots peeled and halved or quatered.

Recipe Ingredients for Pork Loin with Roasted Pears and Shallots

3 tblsp Olive Oil
1 tblsp Reduced-Sodium Soy Sauce
2 tblsp Fresh Lemon Juice
4 lb Pork Loin
12 oz. Shallots
3 Pears
3/4 tspn Salt
3 cloves Garlic
4 cups Fat Free Chicken Broth
2 tblsp I Can't Believe It's Not Butter
3 tblsp All-purpose Flour

Recipe Directions for Pork Loin with Roasted Pears and Shallots

  1. Marinate Pork in Olive Oil, Soy Sauce and Lemon Juice in a zip-lock bag. 30 minutes.

  2. Preheat oven 450 degrees. Toss Pears and Shallots in roasting pan with 1 tblsp Olive Oil and 1/2 tspn Salt. Drain meat (reserve marinade) place in middle of pear mix. Make slits in top of loin and stuff with sliced garlic and thyme sprigs. Roast 15 min. lower temp to 325 degrees. Cook till internal temp reaches 145 to 150 degrees (Aprox. 40 min.)

  3. Melt Butter over medium heat, whisk in flour, cook till golden brown. Pour in broth and reserved marinade. Cook untill thick 10 to 15 Min. Stir in thyme. Remove from heat.

  4. Let meat stand 5 minute before slicing. (If shallots are not weel caramelized, remove pork and set on warm place covered with foil. Increase oven to 400 degrees, place shallots and pears back in oven and cook until carmelized, 10 to 15 min. more.)
